Goreme: the best all-round base

If you only pick one base, pick Goreme. It sits right in the middle of the valleys, so the balloons launch and drift directly over the town at sunrise, and a cave hotel with a terrace puts you under the whole show. Nearly every stay here is carved into the rock, the tours collect you from your door, and the restaurants and the Goreme Open-Air Museum are a short walk away.
The trade-off is that Goreme is the busiest, most touristy base. Stay central to walk everywhere, or a little up the slopes for a quieter room with a wider view.

Eat and see nearby: Go up to Sunset Point or the Red Valley viewpoints for the evening light. Uchisar: the views, and a quieter stay
Uchisar sits higher than anywhere else in Cappadocia, gathered around the tall rock of Uchisar Castle. That height is the draw: the boutique cave hotels here look out over the whole valley, so the sunrise balloon panorama from your terrace is wider than from the valley floor. It is calmer and more upscale than Goreme, and only a few minutes away by car or taxi when you want the restaurants and the launch field.

Eat and see nearby: Climb Uchisar Castle for the highest view in the region, then watch the sunset over Pigeon Valley just below. The valley walk down toward Goreme is one of the prettiest short hikes in Cappadocia.
Urgup: a real town, food and wine
Urgup is the grown-up of the three: a proper town rather than a tourist village, with a long history, a wine-making tradition, some of the area’s best restaurants, and a cluster of beautiful restored cave hotels. The balloons are a short hop away, and you trade a little of Goreme’s convenience for a more rounded, lived-in base with better dining.

Eat and see nearby: Urgup is the easiest base for a Cappadocian wine tasting, and the Devrent (Imagination) Valley and the fairy chimneys at Pasabag are close. Ortahisar, a quieter village with its own rock castle, sits between Urgup and Goreme if you want somewhere even calmer.
Avanos: calm, local and crafts
On the banks of the Red River, Avanos is the quiet, local choice, a pottery town where the clay has been worked for centuries. It is further from the balloon core and feels more like everyday Turkey, which is exactly the appeal for some travellers. Expect more value and fewer crowds, in exchange for needing a car or tours to reach the main valleys.

Eat and see nearby: Try your hand at a pottery workshop, the thing Avanos is known for, and walk the river at dusk. The Green Tour out to the Derinkuyu underground city and the Ihlara Valley is an easy day from here.
Where to stay for the balloons
The balloons are why most people come, so it is worth being deliberate. For the experience of waking to balloons drifting right past your terrace, book a cave hotel in Goreme with a terrace or valley view. For the wide, postcard panorama over the whole valley at once, go higher in Uchisar. Either way, book a sunrise flight early, and build in a spare morning: flights are grounded in high wind, and a buffer day saves the trip. Getting around: do you need a car?
You can do Cappadocia car-free. The two classic day tours, the Red Tour around the Goreme valleys and the Green Tour out to the underground cities and the Ihlara Valley, pick you up from your hotel and cover almost everything, and the balloon companies include transfers. A car only earns its keep if you want to chase the quieter valleys and villages on your own time. If you do drive, compare rental cars in Turkey and pick up at Nevsehir or Kayseri airport.
