Staying only one night
This is a mistake because hot air balloons only fly in calm, clear air, and flights are cancelled on a fair number of mornings, especially outside summer. One night means one chance. Give the region at least three mornings, so a cancelled flight can be rebooked or you can watch from the viewpoint instead. Three nights also lets you see the valleys, the open-air museum and an underground city at an unhurried pace. Book a flight with a flexible or rebooking policy, and keep the first morning free.

Skipping a cave hotel
Many hotels in Goreme, Uchisar and Urgup are carved into the soft volcanic rock, with vaulted ceilings, stone terraces and rooms that stay cool in summer. Staying in one is part of the point of the trip, and children usually remember it long after the balloons. The mistake is booking a plain hotel on the edge of town. Look for a cave room with a terrace that faces the valley, check that there are not too many stairs if you travel with a stroller, and book early in spring and autumn.

Missing the sunrise viewpoint
You do not need to buy a balloon ticket to see the balloons. Each morning at dawn, dozens rise together over the valleys, and public viewpoints above Goreme give a clear view for free. Families often assume the flight is the only way, then spend a large share of the budget on it without checking whether young children can fly. Age and height limits vary by operator. Take blankets or warm layers, because dawn is cold even in summer, and arrive before first light to get a good spot.

Not seeing the underground cities
Cappadocia has several cities dug deep into the rock, used for shelter in past centuries. Derinkuyu is the best known, with around eight levels open to visitors, stables, kitchens, wells and rolling stone doors that seal the passages. Children tend to love the tunnels. Go early or late in the day, because passages are narrow and tour groups can create queues. Wear closed shoes, bring a small torch, and be aware that some passages are low and tight. Kaymakli is another option nearby.

Going deep in winter
Snow on the rock formations looks beautiful, but December to February is cold, and balloon flights are cancelled much more often. Some tours and services slow down too. The best windows for families are April to June, when it is green and mild, and September to October, when days are warm and clear. Summer is hot in the middle of the day, so plan outings around dawn and evening. If you only have winter dates, stay at least four nights and choose a hotel with good heating.
